TASTING NOTES :

Deep amber robe. Aromas of dried fig, layered with gentle spice and lifted by a note of fresh liquorice. On the palate, surprising freshness and great persistence.

FOOD PAIRINGS :

Blue cheeses like Roquefort, chocolate or dried fruit-based desserts, or even enjoyed alongside a fine cigar. Open one hour before serving at 15°C.

TERROIR AND VINE MANAGMENT :

South-facing slopes of decomposed schist and black marl. Soils are regularly tilled. Goblet-trained vines over 40 years old. Average yield: 18 hl/ha. Planting density: 3,500–4,000 vines/ha.

90 % Grenache noir, 5% Maccabeu, 5% Carignan

GRAPE HARVEST :

Manual harvest. Double sorting and destemming.

WINEMAKING :

Extra alcohol is added during the fermentation while the wine is still on the skins (mutage sur grains), and then the whole is allowed to macerate for 30 days to extract the aromas and polyphenols from the grapes, ensuring a nice balance of fruit, alcohol and sugar.

MATURATION AND BOTTLING :

One year in glass demijohns outdoors under the sun, followed by ageing in old 350-hl oak casks for at least 20 years. This exceptionally long ageing, a true Mas Amiel signature, allows the wine to develop profound aromatic maturity and structural depth.

Amber hued, this wine has an aromatic nose of dried fig, leather, caramel, toasted almonds and wet leaves. Additional falvors of yogurt and brioch emerge on the finish and with good concentration. Drink now or serve with a cheese course. Already aged for 20 years, this dessert wine will continue to improve in bottle for another 20 years if you have the patience. R.S.

An expressive nose with baked plums, hints of prunes, roasted meat, caramel and spices. Textural and lively with patina. Structured with a core of fruit at the center and plenty of spices around the edges and towards the flavorful, focused finish. Drink or hold.

Mas Amiel is doing the splits, offering this year a young garnet and this aged maury, which has waited twenty years in large chestnut barrels, in the shadow of the farmhouse. A wine that tells its story of black fruits and cherry gradually transformed into prune, cocoa, coffee and walnut characteristic of rancio. It has kept its power, its presence, but has rounded out, calmed down, retaining a beautiful freshness that balances its sweetness, before the walnut takes over the finish.

UNIQUE WINEMAKING TECHNIQUE

Our oxidative Vins Doux Naturels, made from old-vine Grenache grapes fortified while still on the skins, spend one full year under the open sky in glass demijohns, exposed to the Roussillon sun and its dramatic temperature shifts, before continuing their slow, decades-long evolution in century-old casks.

PARCELS, GRAPE VARIETIES & TERROIR

90% Grenache Noir, 5% Maccabeu, 5% Carignan

The soils, composed of weathered schist and black marl, benefit from a full south-facing exposure that ensures optimal ripening of the grapes. Vineyard management prioritises traditional ploughing to preserve living soils and encourage deep root systems. The old-vine Grenache, over forty years of age and trained in the traditional goblet bush form, delivers naturally low yields of around 18 hl/ha, with a planting density of 3,500 to 4,000 vines per hectare.
