This cuvée, a tribute to Charles Dupuy, was born from the selection of one exceptional MAS AMIEL area, called Cabirou. The VINTAGE CHARLES DUPUY is aged for 18 months in new oak barrels. The wine has remarkable balance with tempting sweetness, exceptional intensity, and refreshing acidity.

TASTING NOTES:

It asserts its originality through an astonishing nose of black truffles, jam
of black fruits, caramel, peppers and spices. A vintage with sugars
penetrating, tangy, dazzling in intensity. The tannins of great salinity
harmoniously balance the finale.

PERFECT AGREEMENTS:

With seven-hour lamb or wild boar stew with citrus fruits.

TERROIR AND VINE MANAGEMENT:

Vineyard farmed 100% biodynamically. Cabirou parcel is situated on a slope resembling an amphitheatre. It consists of schist gravels resting on clay soils that are 1.5 meters deep before reaching the bedrock. South exposition. Soils are ploughed using a special tractor.
Age of the vines trained in goblet system:94 years. Average yield: 10 to 15 hectolitres per hectare with a density of 3 500 to 4 000 vines per hectare.

GRAPE VARIETIES:

100% Grenache planted in 1914. The venerable age of the hundred-year-old Grenache vines allows the roots to penetrate deep into the soil for water, micronutrients and mineral supply.

GRAPE HARVEST:

Manual, from the last week of September to mid-October. Double manual sorting of the bunches on a belt and vibrating table, destemming and light crushing.

WINEMAKING:

Vinification in temperature-controlled wooden vats. Alcoholic fermentation at 25°C. Halfway through, a neutral spirit is added (mutage) directly onto the must followed by a maceration for 15 to 20 days. The mutage process stops the fermentation process. Asphyxiated, the yeasts cease their activity, and the resulting wine retains a proportion of residual natural sugars. The signature of the winemaker? The precise moment of the mutage and the volume of spirit added will determine the typicity of Mas Amiel fortified wines.
The sweetness and the concentration are perfectly balanced by the elegant structure and vibrant freshness.

MATURATION AND BOTTLING:

After the wine is transferred into barrels (half new and half used once) to be aged for 18 months.

DECANTER

What an incredible, lifted, spicy and floral nose, so complex and yet fresh. It’s not overly full-bodied, just has great concentration and resonance, with lovely acidity. Notes of black cherry and liquorice. It holds its alcohol well, with tremendous length. No sulphites added before bottling, fermented with natural yeast. From very old plots of vines, over 100 years old.

I got goosebumps from one sniff of the glass, and then goosebumps down to my toes when I tasted it. A pure nose, tingling fragrance, heady with peony perfume, with crushed alpine strawberries. It starts soaringly pure and soprano, but as the wine moves descant-like through the mouth, the alto and tenor notes build, deepen, bring plum cake and blackberry and cassis and spice. Another Mas Amiel heartbreaker.
